Process
Made from the heart of the espadin agave, Doña Sarita is a meticulously hand-crafted mezcal, produced in the Mexican state of Oaxaca.
The traditional, centuries-old production method ensures a purity of process that begins with the succulent agave plant: a source of both nutriment and medicine for native peoples of Oaxaca.
The "piña" (heart) of the plant is roasted in pit ovens over hot rocks for nearly three days. After a period of cooling, the piñas are crushed; the juice is then extracted by mule-powered mills. Once pulped, the agave begins its fermentation in exposed wooden vats. Smell and taste is our master distiller’s only instruments to decide whether fermentation is finished. Upon fermentation, the spirit is poured into copper tubs to be distilled over heat of up to 176 F/ until perfection of flavor, clarity and purity is achieved.
